We love eggs benedict! The kids were introduced a few years ago at Highland Grill / Longfellow Grill several years ago. I am the one who typically orders it. On one occasion, Sam and Wil both wanted to try it and basically devoured it. Because we are fairly thrifty folks, at almost $10 a plate, we didn't have a large desire to take the kids when they really wanted their own because they loved it. So, like the typical way we are, we decided to try to master it at home.
Well, hollandaise is hard to make. I couldn't get the sauce to not separate. We tried and tried again. No luck...until the Vitamix. My love of the vitamix is a whole separate topic. We have been loving it for green smoothies, but using the same eggs benedict recipe (we like it but cut the lemon to about 2/3) as before and blend all the ingredients and warm it in the vitamix created perfection! We've made it several times.

The vitamix does produce a very loud sound and we are working on ways to adapt to that.
We don't typically purchase bread items so this day we didn't have english muffins. We used our favorite bread recipe from Healthy Bread Recipes in Five Minutes a Day that was in the December edition of my new favorite magazine, Mother Earth News. We grind fresh wheat berries and make a batch of dough once a week and make fresh bread the days we need it. It is a great thrifty, healthy alternative to purchasing from the store and it tastes fantastic!
The eggs were nice and fresh and come from "our farm" in Minnesota. We pick up fresh milk, eggs, wheat berries, flax, and cheese weekly. The ham came from another farm in Minnesota that we order from monthly called Pastures a Plenty. We feel fortunate to have fresh, healthy options for our family. We also feel good that we know that these small farms are treating these animals humanely (yes, I know, before we eat them).
